2012 HOME BLOCK CHENIN BLANC

Full-bodied & aromatic

TASTING NOTES

Deep straw.

Ripe apple, fig and creamed pear fruits, with honeysuckle and brioche undertones.

The wine has a full bodied palate and is softly textured. It is a dry style of Chenin Blanc with a finely balanced acidity that adds to the wine's length and persistence of flavour.

This wine is ready to drink now, but careful cellaring will be rewarded with the development of complex flavours.

Lightly chilled

This is wine makes an ideal accompaniment to a great range of dishes. Try with salads, mild and spicy rice dishes, sushi, seafood and white meats.

Blue Castello, Derby or Camembert.

VITICULTURE

The early ripening season was mild and dry. Favourable conditions early in the season lead to a good fruit set. Wetter weather over late December caused rapid growth and a need for careful canopy management. The later part of the season was both warm and dry, with cool nights to retain acid freshness and delicate flavours. While there were spells of rain over harvest period, an open canopy and regular sea breezes helped to maintain clean, fully ripe grapes with fantastic flavours before heavy rains in mid April.

WINEMAKING

Great care was taken in the vineyard to ensure an even ripeness of the bunches. The grapes were select hand-picked and whole cluster pressed to minimise phenolics. After a brief settling period, the juice was fermented with a selected yeast strain. The majority was fermented in stainless steel and small portion in an old, French oak barrel.
