The season started with a relatively cool and wet spring. This was followed by a warm, dry summer with limited rainfall. The dry conditions continued until the fruit reached full ripeness in early April.

WINEMAKING

The fruit was hand-picked, de-stemmed and crushed. It was then given a 24 hour period of skin contact to extract flavour. The free run and light pressings were then settled and cold fermented with a selected aromatic yeast strain in stainless steel. The ferments were stopped with some residual to balance the alcohol and aid the variety’s oily texture. Bottling date; 6th September, 2013
